Biography:

Polly Knutson serves as the Director of Sustainability Programming and UCCS Farm at the University of Colorado Colorado Springs. With a background in project management, business administration, public administration, and food systems, Polly leads campus-wide sustainability efforts focused on education, engagement, and environmental stewardship. She is passionate about creating innovative programs that reduce the university’s ecological footprint while strengthening community connections and student learning opportunities.

Under Polly’s leadership, the UCCS Farm has become a vibrant hub for experiential education, food access, and student engagement. She also oversees key sustainability initiatives such as the campus farmers market, waste audits, the Green Action Fund, and the GoGreen program, which unites campus sustainability under one umbrella. Her work emphasizes inclusive practices, systemic thinking, and actionable impact—helping to shape a more sustainable future for both UCCS and the greater Colorado Springs community.

Polly holds an MBA from UCCS and a Bachelor of Science in Project Management from Colorado State University, along with associate degrees in culinary arts and elementary education. She brings over a decade of experience in university dining, program development, and sustainable food systems.
